Introducing Merchants’ Quay Irish Whiskey Palo Cortado Finish – Limited Edition.
Merchant’s Quay Palo Cortado is the newest limited-edition release in our Merchant’s Quay Collection. It is a unique Irish Whiskey shaped by one of Spain’s rarest sherry styles.
Palo Cortado (PC) is a natural anomaly in sherry production. It begins life as a bright Fino but, after unexpectedly losing its yeast layer, it ages like an Oloroso sherry. The result is a dry, mahogany-coloured sherry with the grace of Amontillado and the depth of Oloroso.
To create this whiskey, we began with our award-winning Merchants’ Quay Blended Irish Whiskey, known for its sweet fruit and refined oak. This was then finished in two 120L Palo Cortado quarter casks and two 225L Palo Cortado barriques and matured for 10 months and 4 months respectively.
Expect fresh, dark and dried fruits, followed by warm layers of nut, oak and delicate sherry richness. It is vibrant, layered and deeply satisfying from first sip to finish.
HOW IT SMELLS
Dried fruits, honey, mandarin, fresh apple, with a whisper of baking spice and balsamic vinegar.
HOW IT TASTES
Warm and slightly dry, with caramel, sweet vanilla, oak spice, citrus peel, and sherried raisins.
THE FINISH
Lingering dry warmth, with a hint of sherry reduction and Crème Brûlée.
