How It’s Done

A bespoke blended Irish whiskey specially created to deliver a unique and approachable flavour. Using grain whiskey matured in first fill American bourbon and re-char casks, combined with malt whiskey matured in Pedro Ximénez and Banyuls casks, the result is a whiskey fitting for the Copeland Distillery Merchants’ Quay range.

The grain whiskey keeps this blend soft and mellow, while allowing the malt portions to shine through. The rich Pedro Ximénez casks adds body with some jammy dark fruit and the Banyuls casks round out the flavour with oak, dried strawberries, some nuttiness, and a little chocolate.

As with all our Merchants’ Quay whiskeys, it is natural colour and non-chill filtered.

How It Smells

Fragrant, mellow and sweet. Foam banana sweets, oak, blackcurrant and raspberry jam, mixed with notes of meadow clover.  Freshly baked sweet croissant and vanilla cupcakes notes, pine orange spritz and roasted walnut round out the nose.

How It Tastes

Slightly dry and very easy to sip on. Fresh, sweet and floral with flavours of oak char and slightly salty buttered crackers with a hint of apricot marmalade, fresh hay, green apple and perhaps some fresh bread. Followed by a slight warmth and mild clove spice.

The Finish

Medium to short finish that is medium dry with a hint of vanilla, which lingers just long enough to invite you for another sip.
